Soon there will be too many berries; strawberries, black berries, blue berries, gooseberries, plus so many others. At least, that is the theory come berry season. At my home this rarely happens. We just eat loads of berries for as long as we can get them. We like them so much that we rarely have too many, but occasionally, some people—this may be you– do have too many berries to eat all at once and what are you going to do if that happens? Let them rot? Heck no! You’d be crazy to let that happen.
When you find you have too many berries—or any very easily perishable fruit—just freeze them for later use. No, they won’t be as good as fresh—nothing rarely is—but you can still use them frozen for smoothies, for topping pancakes, French toast, pies, ice cream and other desserts. Munching on a frozen berry on a hot summer day is most refreshing for a little kid—almost like eating an ice pop, and it’s totally natural! What parent dad wouldn’t like that?
How to prepare berries for freezer:
Wash, hull and slice berries. If small leave them whole. Allow to dry then store in plastic containers or freezer storage bags. I like using containers in which come prepared cake frosting. They are the perfect size for enough berries to make fruit smoothies.
Some folks like to add a touch of sugar to the berries and slightly crush them before placing in freezer. This method is great if you will use the crushed berries to dress up a plain piece of pound cake or angle cake. Yum!
Place 1 cup of frozen berries, 1 cup of orange juice, one banana and a few ice cubes in blender and blend until smooth. For an extra protein boost, add a cup of plain or vanilla yogurt. It’s wonderfully delicious and super easy.
Really, it is so very easy to use up every single berry your garden produces. Just freeze them for later use!
